A muti-purpose cooking appliance for grilling, roasting, baking, steaming, stewing, blanching, and/or poaching meat, fish, poultry, vegetables, egg dishes, baked goods, desserts, in quantity. Combination ovens are widely used in the food service industry to provide a variety of cooking functions in a single appliance. In addition to baking and roasting, a combination oven is also capable of steaming, proofing and reheating various food products. Foods can be cooked in a convection oven dry heat mode, a steam only mode, or a combination of dry heat and steam modes.
FEATURES:
- Oven interior area: 25 inches deep by 17.5 inches wide by 19.5 inches high.
- All food grade sanitary stainless steel construction and product contacts.
- Includes 6 half size sheet pans.
- Overall dimensions without stand 31 inches deep by 36 inches wide by 33 inches high.
- Electric oven heat, with 208 / 230 / 460 volt 3 phase electrical input.
- 2 inch top water inlet, manufacturer rated for 29.67 lbs water pressure, and a flow rate of 3.2 gallons a minute, minimum.
- "Half size" combination oven with "ClimaPlus Control" manufacturer rated to automatically continuously measure and adjust the humidity level in the oven to the desired setting.
- Previously used in a food processing plant food laboratory for product development and quality assurance testing, and related pilot line testing applications.
